The restaurant is owned by Servedwell Hospitality and in partnership with Peter Biondi who has worked at several NYC Michelin-star restaurants and Chef Josh Riazi, who has worked in several James Beard Award winning restaurants. The Rodman Candleworks building is the last standing Candleworks building in the United States. The name Candela Cucina, “candle kitchen,” honors the history of the building where fine candles were made from spermaceti, creating a bright, clean and steady light. More expensive than whale oil candles, these candles were a luxury item prized for their smokeless quality.
